When I was living in Eastern Massachusetts there was a local vineyard that produced award winning wines and champagne. I loved their wine and the atmosphere of this vineyard so much I convinced them to do a pairing meal using me as their chef of course. They said yes do something for St Patrick’s Day. That gave me some pause, I wanted a meal that was both true to old world tradition and modernized. I had a wonderful time and the meal was a huge success. Whether you choose this meal for St Patty’s Day or any day it is a fine feast!
